For this recipe, I suggest using homemade roasted chicken. I chop mine into huge chunks so that every bite is fulfilling. As this recipe cooks, the flavors melt together into a wonderful and flavorful soup.
How to prep the veggies
When using a slow cooker, chopping your veggies into evenly sized pieces is best. I begin by peeling the carrots and then working my way to the celery and onions. Since this simmers for approximately 4 hours, creating 1/2 inch sized cubes is preferred. Anything smaller may turn too soft.

Classic Thyme Chicken Soup
Slow cooker: High

Cook: 4 hours
- 1 lb. roasted chicken breast
- 2 large carrots
- 1 stock of celery
- 1/2 large onion
- 1 1/2 tsp. minced garlic
- 2 tbs. olive oil
- 2 tsp. of dried thyme
- 1 bay leaf
- 32. oz of Kitchen Basics Organic Free-Range Chicken Stock
- 1/2 tsp. cumin
- 1 tsp. dried parsley
- 8 oz. elbow noodles
- 1/2 tsp. salt.
- 1/4 tsp. pepper
- First, chop chicken, carrots, celery, and onion into 1/2 inch cubes.
- Add chopped pieces into your slow cooker.
- Then add the garlic, olive oil, thyme, bay leaf, chicken stock, cumin, and parsley to the slow cooker.
- Next, cook for 3 1/2 hours on high.
- Afterward, add the egg noodles to the slow cooker.
- Cook for an additional 30 minutes.
- Lastly, serve when the noodles become soft.
