When you think of Spring, you think of florals and delicate details. You also think of all of the beautiful warm weather. Everything is cheerful and everyone is ready to play outside. To further commence the celebration of Spring, I decided to make some delicious coconut cookies. These light and sweet delicacies are a perfect way to enjoy the blissful feeling of the season, as well as the ultimate break-time cookie. Paired with a flavorful cup of coffee, these coconutty morsels are a real treat.
My favorite way to enjoy
I love the freshness of Spring mornings. Part of turning my home into a sanctuary means enjoying all of the simple pleasures in life. Every time I make these 4 ingredient chewy coconut cookies, I also indulge myself in a huge cup of coffee. I’ll start by brewing my preferred roast, then I’ll add a few splashes of International Delight® Almond Joy™. Since this recipe includes a splash for the cookies themselves, the flavors of the cookies and the coffee pair wonderfully together.
Did you know there are several flavors to choose from? I’ll often mix things up and use a different flavor every time. Here’s the selection list:

As you can see, it’s very hard to decide. I mean, it’s almost like having my favorite candy in my coffee!
Making the perfect cookie
These chewy coconut cookies are so easy to make it’s ridiculous. Furthermore, since there are only 4 ingredients, the “hardest” work is in the mixing. You start with 4 egg whites; however, before you add anything else, make sure to whip them up. Mix them alone in a bowl until they begin to froth. This ensures that there is enough air inside of the cookie to make it nice and fluffy. Afterward, you’re all set to add the rest of the remaining ingredients.
Speaking of the ingredients, I purchased all of the items used for this recipe from Walmart. The International Delight® Almond Joy™ is found in the milk and creamer section of the store. This aisle is usually located in the back of the store. (See pictures below.) Also, you can save on your favorite International Delight flavors by checking for the in-store display. It includes a tear-pad with recipes and $0.50 off coupons.
Use an ice cream scoop for best results
To get the correct shaping of the cookie, it’s best to use an ice cream scoop. You want to create small mounds of the coconut mixture while placing them onto the baking pan. Additionally, these cookies do not spread out very much during the baking process; however, they do puff up. Keep that in mind while scooping.

After making these delightfully chewy coconut cookies, you’ll be in the mood to celebrate the turn of the season. Enjoy these freshly baked and warm from the oven. 4 Ingredient Chewy Coconut Cookies
Prep: 10 Minutes
Cook: 20 Minutes
- 4 egg whites
- 3 cups sweetened shredded coconut
- 1/2 cup granulated sugar
- 1 Tbs. International Delight® Almond JoyTM
- Start by preheating your oven to 350F.
- Then, in a large mixing bowl, add the egg whites.
- Use a whisk or electric hand mixer to mix eggs until they begin to froth. You will see bubbles.
- Next, gently add all other ingredients and fold together.
- Afterward, scoop out small spoonfuls of the mixture and place on a baking sheet lined with parchment paper.
- Then, bake for 20 minutes, or until tops are golden brown.
- Lastly, let cool for 5 minutes and enjoy.
